Patient/caregiver was educated on gluten free diet as follows:
- Plain milk and plain yogurt are usually considered gluten free and so, are good for consumption by individuals with gluten sensitivity. Exercise caution with/avoid malted milk products, flavored milk, flavored yogurts, and yogurts with cookies, as the added ingredients could contain gluten and compromise the limitation placed on gluten consumption.
- Regular ice cream is safe for consumption, but avoid ice cream with cookies or candy, as cookies and candy could contain gluten and increase the risk for gluten sensitivity.
- Gluten can also be an ingredient in various seasonings, sauces, condiments, & salad dressings and so, must be carefully watched for, to prevent any accidental consumption. Picking only products with the label “Gluten free” can help prevent gluten allergic response.
- Also, these cereal grains are also used widely in the manufacture of coloring agents such as, caramel, thickening agents such as, maltodextrin, sweeteners such as maltose and fructan, and beverages such as beer and whiskey and so, foods and beverages with these products are best avoided.
