Patient/caregiver was educated gluten free diet as follows:
- All processed foods, such as, frozen meals, ready to be eaten curries, canned fruits, and canned vegetables are best avoided, for the risk of contamination with gluten during food processing.
- Avoid all ready-to-consume meals in the grocery stores, left open for picking by individual customers. Cross-contamination with gluten is a severe risk, when individuals use the same spoon to serve breaded products and gluten free products.
- All fresh meat, poultry, and fish are in general considered gluten free. So, pick your meat, eggs, and fish fresh. Avoid all ready-to-cook and ready-to-eat meat and fish, due to the risk for presence of gluten in the various sauces and bread used during preparation.
- Regular cheese is gluten free and is safe for consumption by individuals with gluten sensitivity. Avoid any cheese products labeled “beer washed”, as the beer used for the cheese processing could carry gluten and compromise the limitation placed on gluten consumption.
- Prefer picking your vegetables, meat, and cheese well packaged from the grocery stores. Avoid picking them unpackaged, to avoid risk for contamination with gluten from gluten containing foods stored in the neighborhood.
